Ingredients

Onion

1 medium, finely chopped

Ground paprika

1½ tsp

Chilli powder

¼ tsp

Garlic

2 clove(s), crushed

Mushrooms

600 g, button variety, sliced

Light sour cream

cup(s), (80g)

99% fat-free plain yoghurt

¼ cup(s), (60g)

Fresh flat-leaf parsley

2 tbs, finely chopped, plus extra leaves to serve

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a large frying pan with oil and cook onion over medium heat, stirring, for 6-8 minutes, or until softened. Stir in paprika, chilli and garlic and cook for 1 minute. Add mushrooms and cook, stirring, for 7-8 minutes, or until tender.
  2. Stir in sour cream and yoghurt until combined, then stir in chopped parsley and season with salt and pepper to taste.
  3. Serve sprinkled with extra parsley leaves.

Notes

Tip: Serve with 2 cups of cooked brown rice.
