Mixed peas with almonds and basil

Adding almonds gives extra crunch and a rich nutty flavour, making these peas simply irresistible.


Ingredients
Olive oil
1 tsp
Leek
1 whole, halved, washed, drained, thinly sliced
Garlic
1 clove(s), crushed
Fresh green peas
1 cup(s), (150g) or frozen variety
Snow peas
250 g, trimmed
Sugar snap peas
150 g, halved lengthways
Fresh basil
¼ cup(s)
Flaked almonds
1 tbs, toasted
Instructions

Heat the oil in a large non-stick frying pan over medium heat. Add leek and garlic, and cook, stirring, for 5 minutes or until leek softens.

Meanwhile, cook peas, snow peas and sugar snap peas in a saucepan of boiling water for 2 minutes or until tender. Drain.

Add peas to the leek mixture and toss to combine. Season with salt and pepper. Remove from heat. Add basil and almonds and toss to combine. Transfer to a serving platter and serve immediately.
