Mixed berry coconut chia pots
2 tbs, white
Light canned coconut milk
½ cup(s), (125ml)
99% fat-free plain natural yoghurt
1 cup(s), (250g)
Vanilla bean paste
125 g, sliced
10 piece(s), toasted, coarsely chopped
Pumpkin seeds (pepitas)
1 tbs, toasted, coarsely chopped
¼ tsp, pinch
- Stir chia, coconut milk, yoghurt and vanilla bean paste in a bowl until combined. Cover and chill for 2-3 hours or until thickened.
- Divide half the chia mixture into 4 serving glasses. Top with half the berries, then remaining chia mixture and remaining berries. Chill until ready to serve.
- Sprinkle chia pots with pistachio, pepita and cinnamon and drizzle with syrup.
