Icy raspberry mint popsicles

Ingredients

Fresh raspberries

100 g

Fresh mint

1 tbs, chopped

Lime rind

½ tsp, finely grated

Lime juice

1 tbs

Soda water

80 ml

Undiluted cordial (all flavours)

2 tbs, raspberry flavoured

Instructions

Crush raspberries in a small bowl with a fork. Stir in mint and lime rind. Spoon mixture evenly among 4 x 60ml popsicle moulds.

Stir lime juice, soda water and cordial in a jug to combine. Pour mixture over crushed raspberries in moulds. Freeze for 6 hours, or overnight, until frozen solid. Release popsicles from moulds to serve.
