Mexican-inspired salad with mango

Ingredients
Olive oil
1 tsp
White wine vinegar
1 tsp
Mixed salad leaves
3 cup(s), (90g)
Canned black beans, rinsed, drained
½ cup(s), (90g)
Mango
¼ medium, chopped
Avocado
¼ medium, sliced
Tomato-based salsa
2 tbs
Lime juice
1 tsp
Tortilla chips
15 g, corn based, crumbled
Instructions

Whisk oil, vinegar and 1 teaspoon water in a large bowl. Season with salt. Add salad leaves and toss gently to lightly coat in dressing.

Scatter dressed salad leaves over a large plate. Top with beans, mango, avocado and salsa. Drizzle with lime juice and sprinkle over tortilla chips.
