Ingredients

Baby potatoes

3 individual, (120g)

Cos lettuce

1 baby, leaves torn

Cherry tomatoes

100 g, sliced

Lebanese cucumber

1 small, sliced

Red capsicum

½ medium, chopped

Red radish

2 large, thinly sliced

Black olives, drained

¼ cup(s), (40g), sliced

Tuna, canned in springwater, drained

150 g, flaked (1 x 185g can)

Lemon juice

1 tbs

Olive oil

2 tsp

Garlic

1 clove(s), crushed

Dried oregano

½ tsp

Instructions

  1. Place potatoes in a small saucepan and cover with water. Season with salt. Bring to the boil and cook for 12 minutes or until tender. Drain. Set aside to cool. Cut into slices.
  2. Combine potato, lettuce, tomatoes, cucumber, capsicum, radish, olives and tuna in a large bowl.
  3. Whisk lemon juice, oil, garlic and oregano in a small bowl. Add dressing to salad and toss to combine.
