Ingredients
  • baby potato
    3 small, (120g) new
  • cos lettuce
    1 baby, leaves torn
  • cherry tomato
    100 g, sliced
  • Lebanese cucumber
    1 small, sliced
  • red capsicum
    ½ medium, chopped
  • Radish, red skinned, unpeeled, fresh
    2 small, thinly sliced
  • black olives, drained
    ¼ cup(s), (40g), sliced
  • Tuna, canned in springwater, drained
    185 g, flaked
  • lemon juice
    1 tbs
  • olive oil
    2 tsp
  • garlic
    1 clove(s), crushed
  • dried oregano
    ½ tsp
Instructions
  1. Place potatoes in a small saucepan and cover with water. Season with salt. Bring to the boil and cook for 12 minutes or until tender. Drain. Set aside to cool. Cut into slices.
  2. Combine potato, cos, tomatoes, cucumber, capsicum, radish, olives and tuna in a large bowl.
  3. Whisk lemon juice, oil, garlic and oregano in a small bowl. Add dressing to salad and toss to combine.
