Fill up on eggs, veg and fresh herbs. Eggs are rich in antioxidants lutein and zeaxanthin, which can help protect your eyesight as you get older.

Ingredients

Mushrooms

3 whole, button variety, sliced

Cherry tomatoes

3 individual, halved

Skim milk

¼ cup(s), (60ml)

Egg(s)

1 medium

Baby spinach

½ cup(s), (10g)

Grated parmesan cheese

1½ tbs

Fresh basil

1 tbs, to serve

Instructions

  1. Saute the mushroom and tomato in a small non-stick frying pan.
  2. Whisk the milk and egg in a bowl, then add to the pan with the spinach. Top with the parmesan and place the pan under a hot grill until frittata has set. Season with pepper and top with basil.
