Margherita pizza quesadillas

Quesadillas are a great way to use up leftovers to make an even quicker midweek meal. Fill your wholemeal tortillas with any leftovers and heat up under the grill or sandwich press and have it ready in 10 minutes!


Ingredients
Wholemeal tortilla
8 small, (8 x 40g)
Pizza sauce
½ cup(s), (140g)
Tomato(es)
4 medium, thinly sliced
Black olives, drained
40 g, (2 tbs) thinkly sliced
Light cheddar cheese
½ cup(s), grated, (50g)
Baby spinach
120 g
Fresh basil
½ cup(s), plus extra to serve
Instructions

Spread 4 tortillas with pizza sauce. Top with tomatoes and olives. Sprinkle with cheese and add baby spinach leaves and basil leaves. Top with the other 4 tortillas.

Cook quesadillas in preheated sandwich press until golden. Cut into wedges.
