If you love pizza, you'll adore this classic with a twist.

Ingredients

Tomato(es)

500 g

Dried oregano

1 tsp

Olive oil

1 tbs

Brown onion

1 medium, finely chopped

Garlic

2 clove(s), crushed

Tomato paste

2 tbs

Wholemeal lebanese bread

200 g

Bocconcini

180 g

Fresh basil

1 cup(s), to serve

Oil spray

2 x 3 second spray(s)

Instructions

  1. Preheat oven to 200°C or 180°C fan-forced. Place tomatoes in a large baking dish. Sprinkle with oregano and lightly spray with oil. Bake for 40–45 minutes or until softened. Cool for 10 minutes. Coarsely chop.
  2. Heat oil in a small saucepan over medium-high heat. Add onion and garlic and cook, stirring, for 3–4 minutes or until softened. Add tomato paste, chopped tomatoes and ½ cup (125ml) water and bring to the boil. Reduce heat and simmer, uncovered, for 5 minutes or until thickened.
  3. Place bread on 2 baking trays and spread with tomato mixture. Top with cheese. Bake for 10–12 minutes or until pizza bases are crisp and cheese has melted. Serve topped with basil.

Notes

SERVING SUGGESTION: Mixed leaf salad.TIP: You can use roma tomatoes instead of vine-ripened tomatoes.
