If you love pizza, you'll adore this classic with a twist.
1 medium, finely chopped
2 clove(s), crushed
Wholemeal lebanese bread

- Preheat oven to 200°C or 180°C fan-forced. Place tomatoes in a large baking dish. Sprinkle with oregano and lightly spray with oil. Bake for 40–45 minutes or until softened. Cool for 10 minutes. Coarsely chop.
- Heat oil in a small saucepan over medium-high heat. Add onion and garlic and cook, stirring, for 3–4 minutes or until softened. Add tomato paste, chopped tomatoes and ½ cup (125ml) water and bring to the boil. Reduce heat and simmer, uncovered, for 5 minutes or until thickened.
- Place bread on 2 baking trays and spread with tomato mixture. Top with cheese. Bake for 10–12 minutes or until pizza bases are crisp and cheese has melted. Serve topped with basil.
SERVING SUGGESTION: Mixed leaf salad.TIP: You can use roma tomatoes instead of vine-ripened tomatoes.
