- Heat olive oil in a small saucepan over medium heat. Add onion and cook, stirring, for 3 minutes or until softened. Add garlic and cook for 30 seconds or until fragrant. Add tomatoes and cook, uncovered, stirring, for 5–7 minutes or until thickened.
- Meanwhile, preheat grill on high. Grill wholegrain bread on both sides until lightly toasted. Top toast with tomato mixture and mozzarella. Grill for 3–4 minutes or until cheese melts. Serve sprinkled with small fresh basil leaves.
