Mango sorbet sandwiches

Crunchy wafers and nuts make a delicious contrast to the smooth sorbet and tangy trio of fresh fruit.
Wafer biscuit, Dutch caramel
12 g, (1 tbs) shelled, chopped
Ice cream stick, sorbet-based
320 g, (4 x 80g scoops mango sorbet)
1 medium, thinly sliced
250 g, thinly sliced
2 tbs, pulp
- Using a small serrated knife, carefully split each wafer in half. Place pistachios on a plate.
- Place a scoop of sorbet onto 4 wafer halves. Gently sandwich with remaining wafers. Roll sides of sorbet in pistachios.
- Combine mango, strawberries and passionfruit pulp in a bowl. Serve with sorbet sandwiches.
