Mango and passionfruit sunshine chutney

This is a perfect condiment to prep ahead for Christmas lunch or put in jars, wrap with ribbon and give as gifts to friends.

Ingredients

olive oil

1 tsp

brown onion

1 medium, Finely chopped

fresh ginger

1 tbs, 3cm piece, finely chopped

fresh red chilli

1 whole, Deseeded, finely chopped

mango

2 medium, Large, flesh coarsely chopped

vinegar

½ cup(s), (125ml), apple cider vinegar

Artificial sweetener

1 tbs, 8 x 2g sachets - Natvia

passionfruit

1 medium, Pulp removed

Instructions

  1. Heat the oil in a medium saucepan over medium heat. Cook the onion, ginger and chilli, stirring occasionally, for 2-3 minutes or until soft.
  2. Add the mango, vinegar and sweetener. Bring to a simmer. Reduce heat to medium-low and simmer for 30 minutes or until the mixture thickens.
  3. Stir in the passionfruit and season with salt.

Notes

SERVE WITH: ham, chicken, turkey, duck, lamb or rare roast beef.
