Lyndal's Christmas canapes
1 medium, lightly beaten
¾ medium, diced
Turkey breast mince
50 g, cut into small slices
1 x 3 second spray(s)
- Preheat oven to 180°C. Lightly spray a 24 x 12-hole (1½ tablespoon) capacity mini muffin tray with oil. Slice wonton wrappers in half diagonally and place in prepared moulds. Brush with egg, reserving about half for later. Bake wontons for 7 mins or until light brown.
- Meanwhile, heat oil in a small saucepan over medium heat. Cook onions for 2-3 minutes, until soft. Add turkey mince, season with salt and pepper and cook for 5-6 minutes, until browned. Add cranberry sauce and stir until well combined.
- Spoon about 1 teaspoon of the turkey mixture into each cooked wonton wrapper. Top each with a slice of brie. Brush lightly with remaining egg.
- Return to oven for 2 minutes or until brie is slightly melted. Serve.
TIP: Enjoy hot or cold. Optional extra: add a little more cranberry sauce to make them pop.
