Lyndal's banana and salted caramel pudding
This is the perfect treat for a cold night or even a warming breakfast for something a little different.
2 individual, pitted and chopped
½ cup(s), (45g)
Unsweetened vanilla almond milk
¼ cup(s), (60ml)
No added sugar, salted caramel topping
- Preheat air fryer to 180℃. Combine dates and 2 tablespoons boiling water in a microwave-safe bowl. Microwave on High (100%) for 30 seconds.
- Process dates, oats, milk, banana, baking powder and vanilla in a small food processor until smooth.
- Spoon mixture into a 450ml capacity ovenproof ramekin. Slowly pour caramel topping into the middle of the pudding mixture. Air fry for 15 minutes. Serve hot.
