Beneath the golden top hides a lipsmacking layer of light and fluffy lime pudding. Mmmm!

Ingredients

Oil spray

1 x 3 second spray(s)

Reduced fat oil spread

100 g

Lime rind

1 tbs, finely grated

Caster sugar

1 cup(s), (220g)

Egg(s)

4 medium, separated

Plain flour

½ cup(s), (75g)

Skim milk

2 cup(s), (500ml)

Lime juice

cup(s), (80ml)

Vanilla yoghurt, 99% fat-free, no added sugar

Instructions

  1. Preheat oven to 180°C or 160°C fan-forced. Lightly spray a 2L (8-cup) capacity ovenproof dish with oil.
  2. Using electric beaters, beat spread, rind and sugar in a small bowl for 3–4 minutes or until pale and creamy. Beat in eggs yolks until combined. Gently fold in flour. Gradually whisk in milk and juice until combined.
  3. Using electric beaters, beat egg whites in a clean, dry bowl until soft peaks form. Gently fold egg whites into lime mixture until combined. Pour mixture into prepared dish and bake for 25–30 minutes or until puffed and golden. Serve warm with yoghurt.
