Who said meat and veg had to be boring? These juicy lamb steaks are complemented with flavoursome minty peas for a match made in heaven.

Ingredients

Lamb leg steak, raw

320 g, (buy 400g), fat trimmed

Frozen green peas

2 cup(s), (240g)

Green shallot(s)

1 tsp, chopped

Fresh mint

1 tbs, chopped

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a large non-stick frying pan with oil and heat over high heat. Season lamb with salt and pepper. Cook lamb for 2 minutes each side for medium or until cooked to your liking. Transfer to a plate and cover with foil. Rest for 2 minutes.
  2. Meanwhile, cook peas in a small saucepan of boiling water for 3 minutes or until tender. Drain. Return to saucepan. Coarsely mash. Stir in shallot and mint. Season with salt and pepper.
  3. Serve lamb on mushy peas.

Notes

Serve with your favourite steamed veggies on the side. Lamb can be easily swapped out for lean rump steak, if preferred.
