Lamb kofta wrap with hummus and salad

Ingredients
Lean lamb mince
300 g
Red onion
½ medium, grated
Carrot(s)
1 medium, grated
Ground cumin
1 tsp
Fresh coriander
1¼ cup(s), chopped
Olive oil
1 tbs
Cherry tomatoes
250 g, halved
Lebanese cucumber
1 medium, finely chopped
Wholemeal pita bread
268 g, (4x67g), warmed
Reduced-fat hummus
⅓ cup(s), (80g)
Rocket
75 g, baby leaves
Instructions

Place mince, onion, carrot, cumin and 1 tablespoon coriander in a medium bowl. Using clean hands, mix until well combined and season with salt and freshly ground black pepper. Roll tablespoons of mixture into balls, flattening slightly.

Heat oil in a large non-stick frying pan over high heat. Cook koftas for 3 minutes each side or until golden and cooked through. Set aside.

Meanwhile, combine tomatoes, cucumber and remaining coriander, then season with salt and freshly ground black pepper. Spread warmed pita bread with hummus, top each with koftas, salad and baby rocket leaves, then roll tightly to enclose. Serve warm or cold.
