Lamb and red onion stir fry

Whip up a meal in minutes with this easy stir fry.


Ingredients
Lamb fillet (tenderloin), raw
120 g, (buy 130g lamb backstrap), fat trimmed, thinly sliced
Red onion
¼ medium, thinly sliced
Garlic
1 clove(s), crushed
Green string beans
100 g, trimmed, halved
Lemon juice
1 tbs
Brown sugar
1 tsp
Fresh mint
¼ cup(s), (torn)
Oil spray
1 x 3 second spray(s)
Instructions

Lightly spray a large wok with oil and heat over high heat. Stir-fry lamb for 1-2 mins or until well browned. Add the onion and garlic and stir-fry for 1 minute.

Add beans, lemon juice and sugar and stir-fry for 2-3 mins or until beans are tender. Remove from heat, add the mint.
