Ingredients

oil spray

1 x 3 second spray(s)

lean lamb fillet

120 g, (130g backstrap, fat trimmed), thinly sliced

red onion

¼ medium, thinly sliced

garlic

1 clove(s), crushed

green beans

100 g, trimmed, halved

lemon juice

1 tbs

brown sugar

1 tsp

fresh mint

¼ cup(s), (torn)

Instructions

  1. Lightly spray a large wok with oil and heat over high heat. Stir-fry lamb for 1-2 mins or until well browned. Add the onion and garlic and stir-fry for 1 minute.
  2. Add beans, lemon juice and sugar and stir-fry for 2-3 mins or until beans are tender. Remove from heat, add the mint.
