Ingredients

skinless chicken thigh

540 g, (4 x 150g) fat trimmed

brown onion

1 medium, chopped

dried apricots

8 whole, thinly sliced

fresh ginger

2 tsp, finely grated

garlic

2 clove(s), crushed

pumpkin, butternut, raw

500 g, cut into 3cm pieces

apricot nectar

¾ cup(s), (180ml)

Moroccan seasoning

2 tsp

lime(s)

1 medium, quartered

fresh coriander

¼ cup(s), leaves

Instructions

  1. Add chicken, onion, apricots, ginger, pumpkin, apricot nectar and Moroccan seasoning to a 4.5 litre (18-cup) slow cooker. Season with salt and pepper.
  2. Cook, covered, on high for 2 hours (or low for 4 hours). Serve with lime wedges and sprinkled with coriander.
