Ingredients

Shredded or desiccated coconut

cup(s), (30)

Almond meal

¼ cup(s), (30g)

Orange rind

2 tsp, finely grated

Cocoa powder

¼ cup(s), (25g)

Fresh dates

200 g, pitted

Chocolate bar, rice crisps

2 individual, orange flavoured

Instructions

  1. Process coconut, almond meal, rind and 1½ tablespoons cocoa in a food processor until finely ground. With motor running, add dates, 1 at a time, until mixture comes together in a ball.
  2. Place bars in a microwave-safe bowl. Cover and microwave on High (100%) for 30 seconds. Add to processor and process until well combined.
  3. Roll mixture into 20 balls (about 2 teaspoons mixture each). Place remaining cocoa on a plate. Roll balls in cocoa to coat. Place on a plate and chill in fridge for 20 minutes or until firm. Serve.

Notes

Store bites in an airtight container in the fridge for up to 2 weeks.
