Ingredients

broccolini

1 bunch(es), cut into thirds

Aioli

75 g, (1/4 cup), light variety

extra light sour cream

2 tbs

fresh chives

2 tbs, chopped

fresh flat-leaf parsley

2 tbs

lemon juice

1½ tbs

anchovy fillets in oil, drained

1 medium, on paper towel

hot smoked salmon

300 g, peppered, skin removed, flaked

avocado

1 medium, thinly sliced

lebanese cucumber

1 medium, halved, thinly sliced

bean sprouts

200 g

baby spinach leaves

120 g

Instructions

  1. Boil, steam or microwave broccolini until tender. Drain. Refresh under cold water. Drain.
  2. Process aioli, sour cream, chives, parsley, juice and anchovy in a small food processor until smooth. Season dressing with salt and pepper.
  3. Combine broccolini, salmon, avocado, cucumber, sprouts, spinach and dressing in a large bowl. Season with salt and pepper to serve.

Notes

TIPS: Peppered hot-smoked salmon is sold in the chiller cabinets of supermarkets. If unavailable, use natural or Thai-style hot-smoked salmon. Add it: 8 canned baby beetroots (quartered) in Step 3. Swap it: Hot-smoked salmon for smoked salmon.
