Teriyaki hot smoked salmon noodle salad

Unexpected lunch guests? Use your noodles and whip up this quick an easy salad that beats a boring sandwich any day.


Ingredients
Dry rice noodles
200 g
Hot smoked salmon
300 g
Mixed salad leaves
4 cup(s), (120g)
Red capsicum
1 medium, thinly sliced
Teriyaki sauce
⅓ cup(s), (80ml)
Sesame seeds
1 tbs, toasted
Instructions

Fill and boil the kettle. Prepare noodles following packet instructions or until just tender. Drain. Rinse under cold water. Drain. Transfer to a large bowl.

Add noodles, salmon, salad leaves, capsicum, sauce and half the seeds and toss gently to combine. Serve sprinkled with remaining seeds.
