Hot and sour seafood soup
The spicy soup can be made in minutes using packaged and fresh ingredients.
Dry rice noodles
2 cup(s), (500ml), salt-reduced
Red curry paste
⅓ cup(s), (tom yum paste)
Seafood marinara mix
Stir fry vegetables
- Place the noodles in a medium heatproof bowl and cover with boiling water. Set aside for 5 minutes or until softened. Drain.
- Meanwhile, bring the stock and 2 cups (500ml) water to the boil in a large saucepan over high heat. Add the tom yum paste. Add the drained noodles, marinara mix and vegetables and simmer, uncovered, for 2 minutes or until just cooked through. Stir in the sugar and fish sauce.
SERVING SUGGESTION: Lime wedges and fresh coriander leaves
