Ingredients
Shortcut bacon
175 g, chopped
Brown onion
1 medium, finely chopped
Carrot(s)
1 medium, cut into 2cm pieces
Celery
1 stick(s), thinly sliced
Garlic
2 clove(s), crushed
Beef stock
6 cup(s)
Canned diced tomatoes
400 g
Risoni (orzo) pasta
150 g
Canned cannellini beans, rinsed, drained
1 400g can
Frozen green peas
1 cup(s), (120g)
Savoy cabbage
1 cup(s), shredded, (75g)
Fresh flat-leaf parsley
1¼ cup(s), to garnish
Oil spray
1 x 3 second spray(s)

Lightly spray a large saucepan with oil and heat over medium heat. Add the bacon, onion, carrot and celery and cook, stirring, for 5 minutes or until bacon is crisp and vegetables are softened.

Add the garlic, stock and tomatoes and bring to the boil. Reduce heat to low and simmer, covered, for 25 minutes. Add the pasta, beans, peas and cabbage and simmer for 10–12 minutes or until the pasta is tender. Season with salt and freshly ground black pepper. Ladle soup into bowls and serve garnished with a parsley sprig.
