Herb and onion frittata

Don't have much in the fridge? This simple and healthy 4 ingredient frittata uses brown onion, olive oil, any fresh herbs and some eggs.
1 large, sliced
2 tbs, chopped (parsley, dill, tarragon, chives and coriander all work well)
- Heat oil in a medium, non-stick, ovenproof frying pan over medium heat. Cook onion, stirring, for 6-8 minutes or until softened.
- Beat eggs in a large bowl. Season with salt and pepper. Stir in fresh herbs . Pour egg mixture over onion in pan. Stir gently to mix and cook over low heat for 8-10 minutes or until almost set.
- Preheat grill on high. Grill frittata for 3-5 minutes or until set. Serve.
