Super simple and quick to pull together, this tasty traybake makes the perfect all-in-one supper for those busy weeknights.

Ingredients

Potato

500 g, new variety, quartered

Cherry tomato

200 g, mixed variety, halved

Red onion

2 medium, cut into wedges

Garlic

4 clove(s), unpeeled

Extra lean pork sausage

8 thin, (8 x 58g)

Harissa

1½ tbs, paste

Olive oil

1½ tsp

Red capsicum

1 medium, chopped

Yellow capsicum

1 medium, chopped

Fresh coriander

1½ tbs, chopped

Lemon(s)

½ medium, cut into wedge to serve

Instructions

  1. Preheat oven to 200°C. Place potatoes, tomatoes, onions, garlic, sausages, harissa paste, olive oil and capsicums in a large baking dish and toss to combine. Season with salt and pepper. Bake 35-40 minutes, stirring halfway through, or until potatoes are golden and tender and sausages are cooked through.
  2. Sprinkle with coriander and serve with lemon wedges.

Notes

For a gluten-free version of this recipe, use gluten-free sausages.
