Ingredients

high fibre wholemeal bread

2 slice(s)

vegemite spread

1 tsp

light cheddar cheese

1½ tbs, grated, grated

egg(s)

2 medium

skim milk

2 tbs

avocado

¼ small, sliced

oil spray

2 x 3 second spray(s)

Instructions

  1. Preheat grill on high. Spread bread with Vegemite. Sprinkle with 2 tsp cheese. Cut each slice in half diagonally.
  2. Lightly spray a 20cm ovenproof frying pan with oil and heat over medium heat. Arrange bread triangles in pan. Whisk eggs and milk in a jug and season with salt and pepper. Pour egg mixture over triangles in pan. Sprinkle with remaining cheese and cook for 1–2 minutes or until omelette is nearly set.
  3. Cook under grill for 1 minute or until cheese has melted. Top with avocado and sprinkle with pepper to serve.
