This is creamy Italian cooking at its finest, molto bella!

Ingredients

Oil spray

1 x 3 second spray(s)

Deli-sliced leg ham

200 g, thinly sliced

Dry pasta

240 g, (spaghetti)

Egg(s)

3 medium

Light cream

¼ cup(s), (65ml)

Skim milk

½ cup(s), (125ml)

Grated parmesan cheese

½ cup(s), (40g), finely grated

Fresh flat-leaf parsley

¼ cup(s), finely chopped

Instructions

  1. Lightly spray a medium non-stick frying pan with oil and heat over medium-high heat. Add chopped ham and cook, stirring, for 5 minutes or until crisp, then remove from pan.
  2. Meanwhile, cook pasta in a large saucepan of boiling water following packet instructions, or until just tender. Drain, reserving ¼ cup (60ml) pasta water. Return cooked pasta to pan and keep warm over low heat.
  3. Combine eggs, cream, skim milk and parmesan in a large jug. Add reserved pasta water, egg mixture, half the parsley and half the ham to pasta. Toss gently to combine so egg mixture starts to set and ham is warmed through. Serve pasta topped with remaining parsley and ham.

Notes

SERVING SUGGESTION: A salad made with green oak leaf lettuce, mesclun lettuce leaves and chopped fresh chives drizzled with a mustard vinaigrette made with 2 teaspoons Dijon mustard, 1 tablespoon red wine vinegar and 1 tablespoon olive oil.TIP: Try giving this recipe even more summer flavour by substituting the parsley for fresh chives or basil.
