Throw together this easy pasta salad for a tasty and filling lunch that is full of colour and taste.

Ingredients

Dry pasta

240 g, spiral

Olive oil

1 tbs

Vinegar

2 tbs, white wine

Green shallot(s)

2 individual, trimmed, thinly sliced

Red capsicum

1 large, thinly sliced

Celery

2 stick(s), trimmed, thinly sliced

Carrot(s)

1 large, peeled, grated

Canned corn kernels, rinsed and drained

120 g

97% fat-free deli sliced ham

150 g

Fresh flat-leaf parsley

2 tbs, chopped

Rocket

2 cup(s), (60g)

Instructions

  1. Cook pasta in a large saucepan of boiling salted water, following packet instructions, or until just tender. Drain.
  2. Whisk oil and vinegar in a large bowl. Add pasta, shallots, capsicum, celery, carrot, corn, ham, parsley and rocket. Toss to combine. Serve.

Notes

TIPS: To take to work, place rocket in a snap-lock bag. Store pasta mixture and dressing in separate containers. Transport in a chiller bag and refrigerate until required. combine just before serving.You can use cooked fresh or frozen corn instead of canned.
