Grilled steak with sweet potato and spinach mash

Ingredients

orange sweet potato (kumara)

100 g, chopped

dijon mustard

2 tsp

baby spinach leaves

1 cup(s), (20g)

lean beef rump steak

120 g, (buy 150g), fat trimmed

oil spray

1 x 3 second spray(s)

Instructions

  1. Cook sweet potato in a small saucepan of boiling salted water for 10 minutes or until tender. Drain well. Return to pan with mustard. Mash until a coarse puree. Stir through spinach and season.
  2. Meanwhile, season steak. Heat a chargrill over high heat and lightly spray with oil. Chargrill steak for 1 minute each side and rest for 2 minutes before serving with mash.
