Grilled lamb patties in pitas
Lean lamb mince
½ medium, finely chopped
2 tbs, finely chopped
Wholemeal pita bread
4 large, (4 x 70g), halved, warmed
1⅓ cup(s), (80g)
1 medium, thinly sliced
1 medium, halved lengthwise, thinly sliced
99% fat-free, plain Greek yoghurt, unsweetened
¼ cup(s), (60g)
1 x 3 second spray(s)
- Place lamb, onion, mint and coriander in a medium bowl. Season with salt and pepper and mix to combine. Shape into 8 (1cm-thick) patties.
- Lightly spray a grill pan or barbecue with oil and heat over medium-high heat. Cook patties for about 4 minutes on each side or until lightly charred and cooked through.
- Fill each pita half with lettuce, capsicum, cucumber and 1 patty. Dollop a heaped teaspoon of yoghurt over filling and season with pepper. Serve 2 pita halves per person.
