Sweet meets sour when green mango does a tango with this simple glazed chicken. Serve with steamed Asian greens that won't overpower the flavour

Ingredients

hoisin sauce

2 tbs

soy sauce

2 tbs

garlic

2 clove(s), crushed

lime rind

1 tsp, finely grated

skinless chicken breast

400 g, fat trimmed, (buy 500g)

lime juice

¼ cup(s)

fish sauce

1 tbs

caster sugar

3 tsp

sesame oil

2 tsp

fresh coriander

cup(s), chopped

green shallot(s)

2 individual, thinly sliced

mango

2 medium, (green mango), peeled, stone removed, grated

Instructions

  1. Combine hoisin and soy sauces, garlic and rind in a shallow glass or ceramic dish. Add chicken and turn to coat. Cover and refrigerate for 3 hours.
  2. Preheat a chargrill or barbecue over medium-high heat. Cook chicken for 3–5 minutes each side or until cooked through.
  3. Meanwhile, combine juice, fish sauce, sugar and oil in a medium bowl. Add coriander, shallots and mango. Toss gently to combine. Serve mango salad with chicken.

Notes

SERVING SUGGESTION: Steamed Asian vegetables such as gai lan (Chinese broccoli) or pak choy, plus jasmine rice.Green (unripe) mangos have a firm yellow flesh and add a refreshing, slightly sour flavour. They are available from some supermarkets, fresh produce markets or Asian grocery stores. If unavailable you can use green papaya.
