Grilled brown sugar mango with pistachios

Fresh mangoes are great as they are but when you add a sprinkle of sugar and spice it makes them twice as nice!

Ingredients

mango

2 medium

brown sugar

1 tbs

ground cinnamon

1 tsp

no-fat, no added sugar vanilla yoghurt

200 g

pistachios

¼ cup(s), chopped (35g)

Instructions

  1. Cut cheeks from each mango. Using a small, sharp knife, score each mango cheek diagonally in both directions. Combine sugar and cinnamon in a bowl. Sprinkle sugar mixture over mango cheeks.
  2. Preheat a chargrill or barbecue over high heat. Cook mango, cut-side down, for 1–2 minutes or until caramelised.
  3. Serve mangoes topped with the yoghurt and sprinkled with pistachios.
