Greek chicken with tzatziki, risoni and capsicums

Make this dinner fast using store-bought BBQ chicken breast and pasta that you’ve cooked in advance and reheated. Best of all, the entire dish comes together in less than 20 minutes. Tzatziki sauce brings an authentic Greek flair to this dish. You can purchase it in the refrigerated section of your grocery store or make your own. You can double the recipe and serve it with pita bread or fresh vegetables.

Ingredients

olive oil

1 tsp

red capsicum

½ medium, sliced

yellow capsicum

½ medium, sliced

dried oregano

½ tsp

black olives, drained

6 individual, quartered

Pasta, risoni, dry

25 g

fresh lemon rind

¼ tsp, finely grated

lemon juice

½ tsp

cooked skinless chicken breast

1 medium, sliced

tzatziki (cucumber and yoghurt dip)

1½ tbs

Instructions

  1. Cook pasta in a medium saucepan of boiling, salted water following packet instructions until tender. Drain.
  2. Heat half the oil in a small non-stick frying pan over medium-high heat, Cook capsicum, garlic and oregano, stirring, for 5 minutes or until capsicum is tender. Stir in olives and season with salt.
  3. Toss risoni with rind, juice and remaining oil. Top risoni with chicken, capsicum and tzatziki to serve.
