Garlic prawns with chilli
500 g, (bought peeled), deveined (see tip)
Reduced fat oil spread
3 clove(s), crushed
Fresh red chilli
1 whole, finely chopped
Fresh flat-leaf parsley
¼ cup(s), finely chopped
1 medium, cut into wedges, to serve
- Using a sharp knife, make a cut along the belly of each prawn (being careful not to cut all the way through). Open out and press lightly to flatten.
- Heat a large non-stick frying pan over medium heat. Add oil and spread and heat for 30 seconds or until spread has melted. Add garlic and chilli and cook, stirring, for 30 seconds or until fragrant.
- Increase heat to medium–high. Add prawns and cook, stirring, for 5 minutes or until just cooked through. Stir in parsley. Serve with lemon wedges.
