Next time you are entertaining and looking for a gourmet dip to make, don’t go past this one! These packed-of-goodness mushrooms are made into a creamy dip that’s topped with herbs and tomato.

Ingredients

Olive oil

2 tsp

Mushrooms

250 g, flat, thinly sliced

Green shallot(s)

3 individual, thinly sliced

Garlic

2 clove(s), crushed

Plain flour

3 tsp

Fresh lemon rind

1 tsp, grated

Extra light sour cream

½ cup(s), (120g), extra-light

Fresh flat-leaf parsley

2 tsp, finely chopped

Fresh chives

2 tsp, finely chopped

Semi-dried tomatoes

1 tbs, finely chopped

Instructions

  1. Heat oil in a large non-stick frying pan over high heat. Add mushrooms, shallots and garlic. Cook, stirring, for 3–4 minutes or until tender.
  2. Stir in flour and cook for 1 minute. Cool. Place mushroom mixture in a food processor with rind and sour cream. Blend until smooth. Spoon into a serving bowl and top with parsley, chives and semi-dried tomatoes. Serve.

Notes

SERVING SUGGESTION: Sourdough toast.
