Ingredients

Fresh raspberries

100 g

99% fat-free, plain or natural yoghurt, unsweetened

50 g

Lemon juice

3 tsp

Skinless turkey breast

300 g, cut into thin strips

Mango

1 medium, thinly sliced

Curry powder

1 tsp

Red onion

1 medium, cut into thin rings

Mixed salad leaves

125 g

Oil spray

1 x 3 second spray(s)

Instructions

  1. Place raspberries in small processor and puree. Push puree through a sieve to remove seeds. Discard seeds. Transfer to a small bowl. Add yoghurt and juice and mix until combined. Season with salt and pepper.
  2. Lightly spray a large non-stick frying pan with oil and heat over high heat. Cook turkey, stirring, for 3 minutes or until browned. Add mango and curry powder and cook for 30 seconds. Season with salt and pepper. In a large bowl, combine onion, salad leaves and dressing. Serve.
