Fruit salad with apple and star anise syrup

Add some colour to your life with this summer salad made super special with the sweet and spicy syrup.

Ingredients

apple juice no added sugar

1 cup(s), no added sugar (250ml)

cinnamon quill

1 whole

star anise

2 individual

cardamom

2 whole

pineapple

1 cup(s), (½ pineapple) thinly sliced

Paw paw or papaya

½ medium, thinly sliced

grapes

200 g, green variety

Instructions

  1. Combine juice, cinnamon, star anise and cardamom in a small saucepan over medium heat and bring to the boil. Cook, stirring occasionally, for 5 minutes or until syrup reduces by half. Set aside to cool completely. Discard cardamom, cinnamon and star anise.
  2. Combine pineapple, papaya and grapes in a large bowl. Pour over syrup and gently toss to combine. Place in fridge for 30 minutes to infuse flavours. Serve.
