Transform the humble apple with this fresh take on nachos which is bursting with vitamins and minerals.


Ingredients
Rockmelon or cantaloupe
150 g, finely chopped
Honeydew
150 g, finely chopped
Fresh mint
2 tbs, finely chopped
99% fat-free, plain Greek yoghurt, unsweetened
¼ cup(s), (60g)
Lime juice
2 tsp
Red apple, unpeeled
1 medium, unpeeled
Green apple, unpeeled
1 medium, unpeeled
Shredded or desiccated coconut
2 tbs, lightly toasted
Instructions

Combine rockmelon, honeydew and mint in a medium bowl. Combine yoghurt and juice in a small bowl.

Cut apples into quarters. Remove cores and thinly slice.

Arrange apple ‘chips’ on serving plates and top with melon ‘salsa’. Top with yoghurt mixture and sprinkle with coconut to serve.
