Frozen raspberry yoghurt

99% fat-free, plain or natural yoghurt, unsweetened
Granulated stevia sweetener
1 tsp, granules
¼ tsp, pinch
- Place frozen raspberries, yoghurt, swevia and mint into a food processor, and pulse until combined. Tip mixture into a freezer-proof container and fold in fresh raspberries. Cover and freeze for 1 hour, then remove from freezer and break up with a fork and stir well.
- Return to freezer and repeat freezing and stirring process twice more, then leave to freeze until firm. If yoghurt becomes too solid, leave out of freezer for 5-10 minutes to soften before serving.
