Ingredients

Frozen raspberries

400 g

99% fat-free, plain or natural yoghurt, unsweetened

500 g

Granulated stevia sweetener

1 tsp, granules

Dried mint

¼ tsp, pinch

Fresh raspberries

150 g

Instructions

  1. Place frozen raspberries, yoghurt, swevia and mint into a food processor, and pulse until combined. Tip mixture into a freezer-proof container and fold in fresh raspberries. Cover and freeze for 1 hour, then remove from freezer and break up with a fork and stir well.
  2. Return to freezer and repeat freezing and stirring process twice more, then leave to freeze until firm. If yoghurt becomes too solid, leave out of freezer for 5-10 minutes to soften before serving.
