Topping basic avocado toast with a slice of left over frittata upgrades it to a protein-packed breakfast that can help keep you fuelled all morning. If you’re off to work of a morning, simply pack the components separately and assemble them in less than 5 minutes to kickstart your day.

Ingredients

Tray bake veggie frittata (WW recipe)

1 slice(s)

Avocado

½ medium

Wholegrain bread

1 slice(s), toasted

Instructions

  1. Microwave frittata on High (100%) for 45 seconds-1 minute, until heated through.
  2. Using a fork, mash avocado on the toast. Season with salt and pepper. Top with frittata. Serve immediately.

Notes

PREP TIP: Toast your bread a little darker than usual to support the hefty topping.
