This no-cook salsa is super fresh and flavourful. Serve over ice cream, yoghurt, waffles, porridge, or pancakes. Or take it the savoury route since it's made with versatile balsamic vinegar. Grilled pork goes great with fruit salsas and rustic grilled fish such as swordfish can stand up to fruity, slightly sweet sauces, too. Add a little extra basil or some finely minced chives or coriander to the mix if you're using this as a savoury salsa. If fresh peaches are out of season substitute for ripe apricots.

Ingredients

Fresh blueberries

Peach(es)

2 medium, diced

Balsamic vinegar

1 tsp

Fresh basil

1 tbs, for garnish

Instructions

  1. Combine blueberries and peaches in a medium bowl; drizzle with vinegar and toss to coat. Serve sprinkled with basil.
