Four seasons super salad
150 g, cut onto florets
2 individual, thinly sliced
1 medium, coarsely grated
½ medium, sliced
Reduced fat feta cheese
40 g, crumbled
½ tsp, (seeds), toasted, crushed
- Cook rice following packet instructions. Drain. Refresh under cold water. Drain.
- Meanwhile, boil, steam or microwave broccoli until tender. Drain. Refresh under cold water. Drain. Cut into bite-sized pieces.
- Combine rice, broccoli, shallots, carrot, oil and lemon juice in a large bowl. Season with salt and pepper. Serve topped with avocado, feta and cumin.
