Fisherman's pie

When you need something substantial, warm and uplifting after a long day, you can’t beat this pie. Reassuringly simple to make and ready in an hour!


Ingredients
Potato(es)
350 g, (frozen packet)
Reduced fat oil spread
1½ tbs
Green shallot(s)
4 individual, trimmed, thinly sliced
Plain flour
2 tbs
Skim milk
1 cup(s), (250ml)
Frozen green peas
⅓ cup(s), (40g)
Frozen corn
⅓ cup(s), (40g)
Ling, raw
600 g, cut into 4cm pieces
Raw peeled prawns
200 g
Fresh flat-leaf parsley
2 tbs, finely chopped
Light cheddar cheese
35 g
Oil spray
1 x 3 second spray(s)

Preheat oven to 200°C or 180°C fan-forced. Lightly spray a 1.5L (6-cup) capacity ovenproof dish with oil. Steam potato for 10 minutes or until just tender.

Meanwhile, melt spread in a medium saucepan over medium heat. Add shallots and cook, stirring, for 2 minutes or until softened. Add flour and cook, stirring, for 1 minute. Gradually add milk and whisk until smooth and combined. Bring to the boil. Reduce heat to low and simmer, uncovered, stirring, for 1 minute or until sauce has thickened.

Add peas and corn and cook, stirring, for 3–4 minutes or until heated through. Add fish, prawns and parsley and stir to combine.

Spoon fish mixture into prepared dish and top with sliced potato. Sprinkle with cheese and bake for 25–30 minutes. Serve.
