Fish with pink grapefruit and rocket
Liven up baked fish with a pink grapefruit and rocket salad that is both beautiful and delish!
4 medium, (4x 150g fillets firm white fish)
2 whole, segmented
4 individual, thinly sliced
1 medium, thinly sliced lengthways
2 cup(s), (60g)
- Lightly spray a preheated barbecue over medium heat. Wrap fish in baking paper and cook for 8-10 minutes or until just cooked through.
- Meanwhile, place grapefruit, radish, cucumber and rocket in a medium bowl, drizzle with oil. Toss gently to combine.
- Serve fish topped with grapefruit salad and coriander.
TIP: Always buy fish with skin on if you want to cook it directly on the barbecue. This will stop it from flaking apart during cooking.
