Fish in white wine
4 clove(s), thinly sliced
400 g, baby variety, half halved
Canned cannellini beans
400 g, rinsed
Wine, white, dry-style
250 ml, (1 cup)
600 g, (4x150g) boneless skinless fillets or any white fish fillet
Mixed frozen vegetables
500 g, broccoli, carrot and sugar snap pea mix
Fresh flat-leaf parsley
⅓ cup(s), finely chopped
Capers, rinsed, drained
1 x 3 second spray(s)
- Lightly spray a large, deep frying pan with oil over medium heat. Cook garlic and tomatoes, stirring, for 5 minutes or until softened. Add beans and wine and bring to the boil. Reduce heat.
- Add fish to tomato mixture. Simmer, covered, for 5-7 minutes or until fish is just cooked through.
- Meanwhile, boil, steam or microwave vegetable mix until just tender. Drain.
- Transfer fish and tomato mixture to serving plates. Bring cooking liquid to the boil. Boil for 3 minutes or until thickened slightly. Spoon cooking liquid over fish and tomatoes. Scatter with capers and parsley. Serve with vegetables.
