Ingredients

Garlic

4 clove(s), thinly sliced

Tomato(es)

400 g, baby variety, half halved

Canned cannellini beans

400 g, rinsed

Dry-style white wine

250 ml, (1 cup)

Snapper, raw

600 g, (4x150g) boneless skinless fillets or any white fish fillet

Vegetable mix, non-starchy, frozen

500 g, broccoli, carrot and sugar snap pea mix

Fresh flat-leaf parsley

cup(s), finely chopped

Capers, rinsed, drained

1 tbs

Oil spray

1 x 3 second spray(s)

Instructions

  1. Lightly spray a large, deep frying pan with oil over medium heat. Cook garlic and tomatoes, stirring, for 5 minutes or until softened. Add beans and wine and bring to the boil. Reduce heat.
  2. Add fish to tomato mixture. Simmer, covered, for 5-7 minutes or until fish is just cooked through.
  3. Meanwhile, boil, steam or microwave vegetable mix until just tender. Drain.
  4. Transfer fish and tomato mixture to serving plates. Bring cooking liquid to the boil. Boil for 3 minutes or until thickened slightly. Spoon cooking liquid over fish and tomatoes. Scatter with capers and parsley. Serve with vegetables.

Notes

SERVING SUGGESTION: Lemon wedges. TIP: Add a finely chopped long fresh red chilli with the garlic for added spice.
