Make a batch of these savoury scrolls and take them to work for a special morning tea.

Ingredients

Light cheddar cheese

100 g, finely grated

Cooked frozen spinach

250 g, thawed

Reduced fat feta cheese

100 g, crumbled

Semi-dried tomatoes

100 g, finely chopped

Filo pastry

4 sheet(s)

Oil spray

4 x 3 second spray(s)

Instructions

  1. Preheat oven to 180°C. Line 2 baking trays with baking paper. Reserve 1½ tablespoons of the tasty cheese. Squeeze some excess water from the spinach and place in a medium bowl. Add the remaining tasty cheese, feta and tomato and stir to combine. Season with pepper.
  2. Lightly spray 1 sheet of filo with olive oil. Top with another sheet of filo and spray with oil. Repeat with remaining filo. Scatter the spinach mixture evenly over filo stack, leaving a 1cm border. Roll up firmly from one long side to enclose the filling. Lightly spray the roll with oil and cut into twenty-four 1cm rounds.
  3. Place the rounds, cut-side up, on the prepared trays. Sprinkle with the reserved tasty cheese and bake for 10-15 minutes or until golden brown.
