This vegie and bacon pasta is yummy, healthy and ready to eat in 30 minutes.

Ingredients

Dry wholemeal pasta

250 g, (penne)

Olive oil

2 tsp

Brown onion

1 medium, chopped

Zucchini

2 large, cut into batons

Shortcut bacon

125 g

Mushrooms

120 g, (button), sliced

Tomato(es)

4 medium, chopped

Green shallot(s)

2 individual, sliced

Shaved parmesan cheese

¾ cup(s), (60g)

Instructions

  1. Cook pasta in a large saucepan of boiling salted water, following packet instructions, or until just tender. Drain.
  2. Meanwhile, heat oil in a large non-stick frying pan over medium heat. Add onion and cook, stirring, for 5 minutes or until softened. Add bacon and cook, stirring, for 2–3 minutes or until crisp. Add zucchini and mushrooms and cook, stirring, for 2 minutes or until tender.
  3. Add tomatoes and cook, covered, for 5 minutes or until tender. Add pasta and shallots and toss gently to combine. Serve topped with parmesan.

Notes

SERVING SUGGESTION: Mixed salad leaves. TIP: You can sprinkle the pasta with chopped parsley and/or oregano if desired.
