Seafood delight! Seafood for the whole family in just 20 minutes, who could complain?

Ingredients

olive oil

1 tbs

brown onion

1 medium, finely chopped

red capsicum

1 medium, finely chopped

reduced-fat salami

50 g, chopped

ground paprika

1 tsp

Seafood marinara mix

500 g

brown rice microwave packet

250 g

frozen green peas

½ cup(s), (75g) thawed

fresh flat-leaf parsley

2 tbs, chopped

lemon(s)

1 medium, cut into wedges

Instructions

  1. Heat the oil in a large, deep non-stick frying pan over medium-high heat. Cook the onion and capsicum, stirring, for 3-4 minutes or until softened. Add the salami and paprika and cook, stirring, for 2 minutes.
  2. Add the marinara and cook, stirring, for 2-3 minutes or until just cooked through. Meanwhile, heat the rice in the microwave following packet instructions. Add rice and peas to the pan and toss gently until heated through.
  3. Sprinkle with the parsley and serve with the lemon wedges.

Notes

SERVING SUGGESTION: Mixed salad leaves drizzled with lemon juice, tossed with 8 halved pimento-stuffed olives. SPs remain the same.This recipe is Gluten Free and Lactose Free.
