With only two steps, it’s no wonder that this recipe is called ‘Easy mixed grill’. Succulent lamb served with chargrilled veggies and bread, it’s great for cooking outdoors with friends.

Ingredients

Lamb Frenched cutlet or rack, raw

12 medium

Tomato(es)

4 medium, (roma), halved

Red onion

1 medium, cut into wedges

Mushrooms

4 whole, (flat variety)

Turkish bread

200 g, (half a loaf)

Fresh basil

2 tbs, shredded

Lemon(s)

1 medium, cut into wedges to serve

Oil spray

2 x 3 second spray(s)

Instructions

  1. Lightly spray a chargrill or barbecue with oil and preheat over medium-high heat. Lightly spray lamb, mushrooms, tomatoes and onion with oil. Cook tomatoes, onion and mushrooms, turning, for 4–5 minutes or until tender. Transfer to a plate. Cover to keep warm.
  2. Cook lamb and bread, turning, for 5–6 minutes or until bread is browned and lamb is cooked to your liking. Cut bread into 8 thick strips.
  3. Arrange lamb and vegetable mixture on serving plates. Sprinkle with basil. Serve with bread and lemon wedges.

Notes

SERVING SUGGESTION: Baby spinach leaves, drizzled with olive oil and lemon juice, plus a dollop of hummus.
